Polar Bear Cubcakes@The Seven Year Cottage

The whole family is certain to have a blast, while recreating these adorable Arctic natives!

Polar Bear Cubcakes

  • Miniature cupcakes
  • 16oz. can white frosting
  • Quart-sized freezer bag
  • Shredded coconut
  • Black licorice pastels or candied sunflower seeds
  • Black jelly beans
  • Smarties

To create fur, chop coconut in a food processor.  This will produce a shorter, finer texture for the furry polar bear cubs.  Pour coconut into a shallow bowl.

Transfer frosting to the resealable bag, close tightly, and snip one corner with kitchen shears.  Pipe a generous mound onto each cupcake.  Roll iced cupcakes in the coconut.  Using your fingertips, gently pack coconut onto wet frosting to ensure even coverage.

For eyes, carefully cut black jelly beans in half with the tip of a sharp paring knife.  Arrange eyes on polar bear faces.  A single black jelly bean is used for the nose.  To give each polar bear cub a mouth, insert a black licorice pastel or sunflower seed under the nose until just the tip remains visible.  Two white Smarties become ears.

The blunt end of a wooden skewer comes in handy for lightly pressing facial features in place, ensuring all candy adheres to the frosting.
